Olive Oil Cake

INGREDIENTS

  • 3 Eggs
  • 1 Cup Sugar
  • Zest from half an Orange
  • Zest from 1 Lemon
  • 1 1/4 Cup Olive Oil
  • 2 Cups Cake Flour or 2 Cups regular Flour minus 2 Tablespoons
  • 1/3 Cup Almond Flour
  • 2 Tsp. Baking Powder
  • 1/2 Tsp Baking Soda
  • Pinch of Salt
  • 3 Tbsp. fresh Orange juice
  • 3 Tbsp. fresh Lemon Juice
  • Powder Sugar for garnish

INSTRUCTIONS

  • Preheat Oven to 350 degrees
  • Whip Eggs, Sugar, and Citrus Zests together until light and fluffy.
  • While Whipping on low speed add Olive Oil.
  • In a separate bowl mix Flour, Almond Flour, Baking Powder, Baking Soda, and Salt.
  • With mixer on low speed add 1/3 of dry ingredients to wet ingredients. Add Orange Juice, 1/3 of dry, Lemon Juice, and then last of dry ingredients.
  • Bake for 45 minutes.
  • Let cool before adding powder sugar on top.
