Olive Oil Cake

INGREDIENTS
- 3 Eggs
- 1 Cup Sugar
- Zest from half an Orange
- Zest from 1 Lemon
- 1 1/4 Cup Olive Oil
- 2 Cups Cake Flour or 2 Cups regular Flour minus 2 Tablespoons
- 1/3 Cup Almond Flour
- 2 Tsp. Baking Powder
- 1/2 Tsp Baking Soda
- Pinch of Salt
- 3 Tbsp. fresh Orange juice
- 3 Tbsp. fresh Lemon Juice
- Powder Sugar for garnish
INSTRUCTIONS
- Preheat Oven to 350 degrees
- Whip Eggs, Sugar, and Citrus Zests together until light and fluffy.
- While Whipping on low speed add Olive Oil.
- In a separate bowl mix Flour, Almond Flour, Baking Powder, Baking Soda, and Salt.
- With mixer on low speed add 1/3 of dry ingredients to wet ingredients. Add Orange Juice, 1/3 of dry, Lemon Juice, and then last of dry ingredients.
- Bake for 45 minutes.
- Let cool before adding powder sugar on top.
